Chinese Fried Rice

Ingredients:

Rice - 3 cups
Carrots - 2
Spring onion - 1 bunch
Fresh beans - 100 gms
Cabbage - 100 gms
Red capsicum - 1
Green capsicum - 1
Vinegar - 1 tbsp
Soya sauce - 1 tsp
White pepper powder - 1 tsp
Oil - 3 tbsp
Salt little
Aj-no-mota (Chinese salt) - to taste

Method :

1. Wash the rice and soak in water for 20 minutes. Drain and add 4 1/2 cups of fresh water and cook the rice till tender and keep cool.
2. Peel carrots and cut into thin strips.
3. Cut red & green capsicums into 1 inch long strips, as same way to cut cabbage and green beans.
4. Cut spring onion into 1 1/2 inch long pieces.
5. Heat oil in rice "tawa", add diced vegetables and fry till soft.
6. Add spring onion, salt + Aj-no-mota( chinese salt), pepper powder, vinegar and soya sauce, stir. And add cooked rice to the sauted mixture.
7. Mix well and continuously saute in high heat till the rice and vegetables are separate into grains.
8. Serve hot with chinese sour vegetables.
